Your precious Berti knives are made from high-quality cutting steel, and we want to share some tips with you so that you can take optimal care of them. Remember that proper maintenance can make them last longer.

  • Dishwasher: knives with Cornotech and Methacrylate handle, can be put them in the dishwasher, but it is important to be aware of the possible consequences. The dishwasher can accelerate the aging of any item washed inside it, so consider this option carefully.
  • Steel quality: It is true that high-quality cutting steels may be less stainless, but this is a sign of their authenticity and strength. Don't worry about any stains or halos and learn how to take care of them.
  • Stains on blades: Your blades may accumulate small reddish spots or bluish halos. This can happen if you let them dry in the dishwasher or dirty for a long time after use, or if the washing water is rich in iron. However, these stains will not affect the functionality of your knives and can be removed easily.
  • Hand washing: The secret to keeping your knives at their best is thorough hand washing and immediate drying after each use. This preserves their beauty and performance over time.
  • Detergents and temperature: Do not use harsh detergents or water at a temperature higher than 60°C when washing. This will help protect the surface and shine of your knives.

How to sharpen your knives
The sharpening of our knives is a handcrafted process involving three separate manual steps. These steps give the blade an optimal geometry for daily use. In addition, the blade edge gradually wears down following a precise geometry, allowing the knives to maintain their cutting capacity over a long period of time and providing a highly enjoyable user experience. The secrets to maintaining the sharpness of a high-quality knife are the use of a proper cutting angle, consistency in movement on the stone, and care in the appearance of the edge.

With time and experience this sharpening procedure will come automatically. In any case, you can always request our handcrafted sharpening service.

Blade
The steel used is Inox AISI 420, which has the advantage of being particularly rich in carbon (>0.53%) and having additions of molybdenum and vanadium, which make it an excellent cutting steel for knives intended for what we might call “normal” use, that is, everyday use in the kitchen, at the table and in other cutting actions to be performed with pocket knives.

This is a steel that reaches a hardness of 55 – 57 HRC and a very fine grain size that makes the edge durable and easy to maintain.

Some of our blades are obtained by shearing, others are forged, but what characterizes them in each case is the sharpening, carried out in no less than three separate entirely manual steps, that give the absolute best geometry to the blade of “normal-use knives” – as described.

The resulting cut is gentle and non-aggressive, so that the food, under the action of the blade, seems to separate spontaneously.

In addition, the edge wears down over time according to a precise geometry, so that it continues to cut for a long time and with great pleasure.


Handle
“Cornotech” is the trade name chosen by Coltellerie Berti to refer to a particular type of orthophthalic polyester resin that has been used to make the handles since January 2013. It is a resin that, when poured into aluminum cylinders, due to its strong viscosity encloses the colors without spreading them throughout the entire mass. This results in sticks that, processed by hand according to a specific process, allow the creation of handles that look and feel very similar to horn.

It is a great quality resin, flexible and workable, resistant to dishwasher and light so much so that it is stable over time, does not yellow, does not age, and retains its luster. It is also dishwasher safe.
